Creamy Au Gratin Potatoes

  • SERVING SIZE   98 g   ( size description n/a ) 
  • 3 small russet potatoes (450g), sliced into 1/4-inch slices
  • 1 whole scallion, sliced into rings
  • 3 Tbs butter
  • 3 Tbs Cambrooke All Purpose Baking Mix
  • 1 cup non-dairy liquid creamer
  • 3 Tbs Cambrooke Shake `N` Cheese
  • Salt & pepper to taste

  • Preheat oven to 400 degrees F (200 degrees C) and grease a 1 quart casserole dish
  • Layer 1/2 of the potatoes into bottom of the prepared casserole dish. Top with the scallion rings, and add the remaing potatoes.
  • Season with salt and pepper.
  • In a medium-size saucepan, melt butter over medium heat. Mix in the baking mix and Shake `N` Cheese, and stir constantly with a whisk for one minute.
  • Stir in creamer. Cook until mixture has thickened. Continue stirring until smooth, about 30 to 60 seconds.
  • Pour cheese sauce over the potatoes, and cover the dish with a glass cover or aluminum foil.
  • Bake 1 hour or until potatoes are tender.
