Saucy Stir-Fried Vegetables Over Rice with Meatballs

Ingredients
  • 1/3 cup (50g) CBF Short Grain Rice
  • 3 CBF Veggie Meatballs
  • 1 Tbs oil
  • 1/4 small red pepper, sliced
  • 1 green onion, sliced
  • 2 Tbs matchstick or shredded carrots
  • SAUCE:
  • 1 1/2 Tbs canola oil
  • 1 1/2 Tbs white vinegar
  • 1/4 cup apricot jam
  • 1/3 cup ketchup
  • 1 Tbs minced onion
  • 1/2 tsp dried oregano
  • dash hot pepper sauce (if desired)
Directions
  • Cook rice and pan-fry meatballs separately according to package instructions and set aside.
  • Quickly saute pepper, onion and carrots and mix with rice.
  • Blend sauce ingredients in small sauce pan and cook on low just until heated through.
  • Arrange rice on plate add top with meatballs and pour sauce over top.
