Fresh Basil-Tomato Pasta

Ingredients
  • 2 servings (114g dry) Pasta Solo or Aproten pasta, prepared
  • 2 Tbs olive oil
  • 1 clove garlic, minced
  • 1/2 cup fresh red tomato, seeded & diced
  • 2 Tbs drained sun dried tomatoes (packed in oil), julienne sliced
  • 2 Tbs dry white wine
  • 1 tsp CBF Chicken Consomme dissolved in 1/4 cup water
  • 1 Tbs fresh basil, shredded
  • 2 Tbs (26g) CBF Herb and Garlic or Plain Cream Cheese
  • 2 Tbs butter or margarine
Directions
  • Saute garlic in olive oil for 1 minute. Don`t brown garlic.
  • Add all the tomatoes and heat for about 3 minutes then add the wine, chicken flavored broth and basil. Heat until liquid is reduced by half.
  • Add cream cheese and butter, mix until melted and pour over pasta. Serve immediately.
