- 1 cup CBF Short Grain Rice or your favorite small low protein pasta, prepared according to package instructions
- 6 (90g) green onions, chopped
- 2 medium (160g) tomatoes, seeded and diced
- 1 small (158g) cucumber, diced
- 1 cup (16mg) fresh parsley or cilantro, chopped fine
- 1/2 cup of olive oil
- 1/4 cup (9mg) fresh lemon juice
- 2 cloves (6mg) minced garlic, chopped fine
- 1 tsp dijon mustard
- 1 tsp ground coriander
- 1/2 tsp of salt
- freshly ground pepper to taste
- TABOULE: Mix ingredients together, set aside.
- DRESSING: whisk ingredients together. Pour over Taboule salad and toss.
- NOTE: To reduce sodium, delete or reduce salt in recipe.
- SUGGESTIONS: Serve with CBF Artisan Bread and fruit chutney as shown.
