Taboule Salad

Ingredients
  • TABOULE:
  • 1 cup Cambrooke Short Grain Rice or your favorite small low protein pasta, prepared according to package instructions
  • 6 (90g) green onions, chopped
  • 2 medium (160g) tomatoes, seeded and diced
  • 1 small (158g) cucumber, diced
  • 1 cup (16mg) fresh parsley or cilantro, chopped fine
  • DRESSING:
  • ½ cup of olive oil
  • ¼ cup (9mg) fresh lemon juice
  • 2 cloves (6mg) minced garlic, chopped fine
  • 1 tsp dijon mustard
  • 1 tsp ground coriander
  • ½ tsp of salt
  • freshly ground pepper to taste
Directions
  • TABOULE: Mix ingredients together, set aside.
  • DRESSING: whisk ingredients together. Pour over Taboule salad and toss.
  • NOTE: To reduce sodium, delete or reduce salt in recipe.
  • SUGGESTIONS: Serve with Cambrooke Artisan Bread and fruit chutney as shown.
